Chinese Red Cooked Beef Stew

2TB veg oil
2LB cube beef chunk
1/3C Soy Sc
2 greens o’s quartered
1 1/2 inch ginger, thinly sliced
2 Star Anise
1/2Cin Stick
3TB dry Sherry/white wine
2TBHoisin Sc
1TB DK brown Sugar
3C Boiling water
10 dried shittake mush/ i used canned if i don’t have
3Med Carrots bias cut
3/4tsS
3TBcornstarch
3TBWater

Heat large pot, Add oil, beef-6-8min. Reduce to Med;stir in Soy, o’s, ginger, star anise, cin, sherry, hoisin & brown sugar. Cook 3 min.

Stir boiling water into beef mix. Reduce to low; cover & simmer 1 1/2 hrs, Stir occ.

Place dried mush in bowl; add enough hot water to cover. Let stand 30 min. Drain; reserve water. Pat dry;discard stems; halve or quarter mush. *If ya use canned, add towards the end.

Small bowl whisk cornstarch w/3TB water; stir into beef mix. Increase heat to med-high, bring to a boil-Boil until thickened-Remove Star Anis & cin stick.
